I know! I was in shock too. What a great surprise to find Avocados being served in the local restaurants of Chania (a major city of Crete) during my honeymoon to Greece. My wife and I were having lunch at this cute little Taverna on the harbor, and I had one of those foodie “ah-ha” moments. Avocado and Feta! Their flavor profiles worked so well together that I had to work on something when I got home.

My Beautiful Bride
INGREDIENTS:
1 Hass Avocado
50 g Creamy “Soft” Feta Cheese
40 g minced Tomato
25 g minced Shallot
1 tbsp or so of EVOO
Kosher Salt
Fresh Cracked Pepper
METHOD:
1. Mince the tomatoes and shallots.
2. Scoop out the avocado and roughly smash in a mixing bowl. Mix in the tomato and shallot. A pinch of salt and a crack of pepper.
3. Crumble in the feta with your hand and mix in together with a little EVOO. Adjust the seasoning to your taste and serve with Seasoned Pita Chips.
