This is not the best season for tomatoes but there are work arounds when you need a fix during the colder months. Grape tomatoes or Camparis are the sweetest options all year long and my trusted go-to for a refreshing Horiatiki Salata (tomato, feta, cucumber, red and green onion, EVOO and oregano). The warmer months bring larger options like the ugly ripes and the heirlooms…but theres nothing that comes close to the vines in my mothers garden in the summer time!

Horiatiki Salata
INGREDIENTS:
- Tomatoes
- Seedless Cucumber
- Red Onion
- Green Onion
- Creamy Feta Cheese
- some EVOO
- Dried Oregano
- Salt and Pepper

Don’t go crazy with exact measurements here…Just have fun and enjoy the tomatoes!

I prefer using a mandolin whenever I want consistency in my cuts…evenly sliced cuc’s make a huge difference in this salad.

Salt and a few cracks of Pepper…

drizzle with a little EVOO…

Get Ready and Give it a little TOSS!!

Finish with a couple slices of green onion.
