Really tired from a LONG study session last night, (i got a 98% on my test by the way) so I’ll try to keep this as short as possible. Today’s lesson included a farm raised striped bass, filleting and cooking in parchment paper yielding an extremely tender and tasty fish. And a trout which we also had to filet but this one we sautéd-skin on-in clarified butter with a browned butter-caper sauce. I love doing these recipes hands on in class everyday, my brain kicks in to overdrive and I think of different ingredient combinations utilizing the same techniques that we learn.
Tomorrow we have “Additional Methods of Cooking Fish” and then sleep…(until Monday at least)
